Abstract : An organoleptic test was conducted to evaluate the different physicochemical characteristics of 6 mango (Mangifera indica) cultivars (Bombay Green, Dashehari, Fazli, Langra Banarasi, Safeda Malihabad and Safeda Lucknow). The analysis revealed that the characters like fruit weight, pulp content, peel content, stone content, specific gravity, total soluble solids, ascorbic acid, total sugars, reducing sugars, nonreducing sugars and acidity are the best quality parameters of fruit liked by buyers and consumers.
