Polyphenols in the aqueous acetone extracts of the peel of ripening fruits.

Abstract : Total phenols in mango and banana fruit peels increased as the fruits approached the climacteric after 9 days' storage at 27 deg C, and 13 days at 21 deg , respectively. However, mango fruits stored at 15 deg showed no such increase and were stored for 20 days without reaching the climacteric.
