Determination of maturity of mango (Mangifera indica L.) cv. Alphonso based on morphological and physico-chemical characters of the fruit.

Abstract : A study was carried out during 2001, in Bangalore, Karnataka, India, with 27-year old mango cv. Alphonso trees, grafted on Nekkare rootstock, to determine the optimum stage of maturity for obtaining good quality fruits. The optimum time for harvesting Alphonso mango was found to be 110 days after fruit set under the southern dry region of Karnataka. At this optimum time of harvest, the fruit skin colour was veronese green near the beak, straw yellow on the waist with yellow or red blush on the shoulder. The lenticels were circular, brown and surrounded by white to cream colour. The fruit firmness was 2.16 kg/cm2 and the specific gravity was 1.04. The chemical indices of fruit maturity were total soluble solids of 8.72°Brix, acidity of 0.81% and starch content of 9.37%.
