Abstract : An experiment was conducted in 1998 and 1999 to study the developmental pattern and maturity standards of mango cultivars Prabha Shankar and Mahmood Bahar under humid subtropics of Sabour, Bihar, India. Observations on the physical and chemical characters of mango fruits were taken from 48 days after fruit set until the harvest date. Fruit growth was faster at the initial stages compared to the later stages. The specific gravity showed an increasing trend during maturation, and was more than 1.00 at the time of fruit harvest in both cultivars. Stone development was completed after 75 days from the date of fruit set in both cultivars. The total soluble solids, total and reducing sugars content increased as the fruits reached maturity. Titratable acidity increased during the initial fruit development stages and declined during the later stages. In both cultivars, ascorbic acid decreased at the earlier growth stages then increased and later became constant until the fruits attained physiological maturity. Total carotenoid content increased as the fruits matured. Fruits of Prabha Shankar and Mahmood Bahar recorded the maximum size, weight and total soluble solids by the third week of June and such may be taken as the suitable harvest period for both cultivars under humid subtropical conditions.
