Abstract : The physical and chemical characteristics of the edible parts of mango cultivars Bocado Comun, Bocobo Jobo and Hilacha were evaluated. The consumer preference for mango pulp was also analysed. A total of 480 fruits was collected during physiological maturity, and were allowed to ripen for 3 days under naturally ambient conditions (26±3°C and 65±5% relative humidity) prior to analyses. Variations were observed for the following characters: fruit fresh mass, and shell, seed and pulp percentages. Total soluble solids (TSS), total acidity (TA) and their ratio (TSS/TA). Bocado Jobo showed the highest total fruit fresh mass, pulp yield and TSS/TA.
