Abstract : Four cvs were studied: Carlota, Haden, Jasmim and Sao Quirino. Under normal refrigerated storage at 8 deg C and 90% RH, Carlota and Haden fruits kept for 2 weeks and Jasmin and Sao Quirino for 3 weeks. However, storage at 8 deg C and 90% RH, in 10% CO2, 6% O2 and 80% N2, produced better results, Haden fruits keeping well for 30 days and Carlota, Jasmim and Sao Quirino for 35 days. Fermentation of the fruits with the production of ethanol occurred when they were stored at 8 deg C for 3 weeks in an atmosphere containing >10% CO2.
