Use of cassava starch in the 'Surpresa' mango postharvest.

Abstract : Mango is a tropical climacteric fruit that ripens quickly after having been picked. The useful postharvest life of 'Surpresa' mangos was evaluated using cassava starch film. The fruits were immersed in 1, 2 and 3% suspensions of cassava starch for 3 minutes, air-dried and conserved at ambient temperature of ±29°C and ±87% relative humidity. The loss of fresh mass, firmness of fruit and pulp, total titratable acidity (TTA), total soluble solids (TSS), TSS/TTA ratio and pH were evaluated besides colour of peel and pulp. The fruits were evaluated at 0, 3, 6, 9 and 12 days. The fruits treated with 3% cassava starch had reduced water loss and improved visual aspects, with shelf life of 12 days compared to 7 days in the control.
