Abstract : A comparative study of the physiological and biochemical composition of 10 mango cultivars (Fazli, Ashina, Langra, Surjapuri, Khirshapat, Gopalbhog, Kisanbhog, Mohanbhog, Latabombai and Ranipasand) was conducted at three maturity stages, i.e. immature, mature and ripe, to find out the standard one. Whole fruit weight, pulp content, peel and stone weight, total soluble solid (TSS), pH, acidity, sugar content and vitamin C were determined. All cultivars at the ripe stages had higher sugar content than immature and mature stages. Attractive flavour and pleasant taste were also observed in ripe stages, with significant differences among cultivars.
