Abstract : Nowadays, consumers are not satisfied in just selecting a mango product by its flavour, price and appearance aspects, but they look more and more for information on the safety, such as the origin of the foods, aspects related to the production form, cares with the environment and with well-being of animals and workers too. In Brazil and in developed countries, several segments of the society are concerned with the food safety subject and seek tools that offer larger safety to consumers. Among these tools, we can highlight the traceability, for being effective and pointing to a safety problem in a specific area, as a place where the products are packed, a group of producers, a unique producer or even a crop, instead of embracing the whole work group of a merchandise. The risk in a food has its reduction with the increase of the speed and the improvement of the precision in the accompanying and in the traceability of foods. Facts that allow to minimize the unnecessary expenditure of public and private resources and to reduce the consumer's concerns. Due to the need of reaching food safety, traceability has been a vital alternative in some segments of the agro-industrial chains.
