Antimutagenic activities of farm products cultivated in Miyazaki prefecture.

Abstract : 44 different farm products that are grown in the Miyazaki prefecture [Japan] were studied for antimutagenic activities. The selected samples were ethanol extracts from grains, vegetables, fruits and herbs. The Ames test and novel antimutagenic test using phase II conjugation enzyme (sulfotransferase) were used to determine the antimutagenic activities. Sweet potato stalk, soyabean, burdock, mango pericarp and labiate herb had strong antimutagenic activities. Soyabean, burdock and mango pericarp showed remarkable antimutagenic activities with the sulfate conjugation method than with the Ames test. The antimutagenic activity of the food was detected using the 2 methods.
