Abstract : The aim of this study was to evaluate the physicochemical properties of mangoes (cv. Tommy Atkins and Haden) stored under the ethylene absorption system (EAS). Green mangoes were packed in low density polyethylene films, under EAS or not, and stored at 30±3°C and 70±5% relative humidity. The treatment groups were as follows: T1 - mangoes cv. Tommy Atkins, under EAS; T2 - mangoes cv. Tommy Atkins, not under EAS; T3 - mangoes cv. Haden, under EAS; and T4 - mangoes cv. Haden, not under EAS. Pulp firmness, soluble solids (SS), titratable acidity (TA), pH, and ascorbic acid and ethylene concentrations of packed mangoes were measured on day 0, 7, 14, 21, 28 and 35. In both cultivars, lower ethylene concentration, better pulp firmness, lower SS and TA, and maintenance of ascorbic acid content were observed in fruits packed under EAS. No significant variations in pH values were detected. Also, EAS-conditioned mangoes received high sensory acceptability.
