Abstract : In irradiated and nonirradiated pulp samples, capillary gas chromatographic analyses revealed at least 137 mango volatiles, 85 pawpaw volatiles and 124 strawberry volatiles. There were no significant differences between the volatile profiles, free amino acid and total amino acid contents or fatty acid composition of irradiated and control samples. Organoleptic qualities, volatile profiles and lipid contents of the fruits were highly dependent on degree of maturity.
