Abstract : Data are presented on the chemical composition of the edible portions of ripe mangoes, pawpaws and strawberries (several cvs of each), and of the radiation stability of typical fruit components. It was concluded that carbohydrate components were the most sensitive to radiation damage, and their reactivity tended to protect other components from degradation. Products of the radiolysis of aqueous solutions of sugars are usually non-toxic.
