Abstract : This chapter reviews the technology and quarantine treatments that have been developed for the postharvest handling of mangoes. The following aspects are covered: considerations influencing postharvest requirements (market and consumer research, quality assurance and good agricultural practice); preharvest management (maturity, adjusting maturation time, skin colour and lenticel damage, storage life and physiological disorders, pests and diseases, weather conditions, and flavour and aroma); harvesting and transport to the packhouse (timing, sapburn, harvesting and desapping, and transport to the packhouse); packhouse measures (delivery inspection and traceability, desapping and washing, disease control, brushing, grading and sizing, grade standards, and disinfestation); preparing fruit for the market (surface coatings, packaging, inspection, palletizing, precooling, and ethylene and ripening); pre- and post-shipping storage (cold storage, and controlled and modified atmosphere storage); transport; and marketing (networks and cooperatives, promotion and consumer education).
