Abstract : The performance of five mango cultivars treated with CO2 for 24 hours and stored for twelve days, under natural conditions of luminosity and temperature (20,0-26,8°C) was evaluated. The cultivars were: Haden, Kent, Keitt, Palmer and Tommy Atkins collected at the Campo Experimental de Santa Barbara del Instituto Nacional de Investigaciones Agrícolas, located at Santa Barbara, Monagas state. The percentage of weight loss (PWL), total soluble solids (TSS) and titratable acidity (TA), the ratio of soluble solids/acid ratio (TSS/TA) and pH were evaluated in triplicate in all varieties. There was no significant difference (P>0,05) of physicochemical parameters during the periods evaluated between mango treated with those not treated with CO2, but the storage period resulted in an increase of the PWL and SST and a constant and significant decrease of AT. In the other hand, there was a significant increase in the period of SST in cultivar Palmer and a firm decrease of pH in cultivar Haden.
