Abstract : Physico-chemical changes during fruit growth and development of mango cv. Amrapali were studied under new alluvial zone of West Bengal. Fruits of Amrapali exhibited single sigmoid growth pattern i.e., fruit growth of initial stages was slow, became rapid at later stages of fruit development and declined slightly in the ripened fruit after harvest. The specific gravity at harvest maturity was observed as greater than 1.0. The TSS and total sugar contents of fruits increased throughout the fruit growth and development, while ascorbic and content showed a decreasing trend. The titratable acidity increased during the early growth stage and declined on attaining maturity. The TSS:acid and sugar:acid ratios increased rapidly during the later part of fruit growth and development. The optimum maturity for harvesting of fruits of the mango cv. Amrapali under new alluvial zone of West Bengal was found between first and second week of June.
