Fruit maturity in mango.

Abstract : Physiological fruit maturity of mangoes, cvs. Sensation and Zill, was attained when 15% of the fruits sank in water at 25 deg C; at that stage fruits with 10 and 15%, respectively, internal yellow colour should be selectively harvested, the resulting harvest period lasting 17-18 days. Early-harvested fruits required about 14 days to attain full external and internal ripeness, compared with only 7 days for late-harvested fruits. With cv. Peach physiological fruit maturity was attained when 53% of the fruits sank in water, internal colour development being complete after 14 days.
