Abstract : This paper proposes and discusses a study on edible coatings, its effect on the conservation of mango and avocado fruits and trends in the use of propolis as a natural alternative in its formulation. Recent studies show that the coatings have emerged as an emerging technology for post harvest storage, shelf life extension and improvement of fruit quality. Its use lies in generating a modified atmosphere in order to reduce the ability of mass transfer of gases that cause weight loss, color, texture and firmness of the fruit after harvest that affect the growth of post harvest losses.
