Color determination in mango (Mangifera sp.) and plantain (Musa AAB) epicarps during ripening with computer vision system.

Abstract : In food and agricultural research, the processing and analysis of colour images has become an important area of study. In this context, computer vision system proved to be a useful procedure. The purposes of this work were the color determination in mango and plantain epicarps during ripening with computer vision system. The system consisted in a lighted stage, a CCD digital camera and a computer (Desktop), both calibrated. The digital processing of images was performed with the Adobe® Photoshop® software, with which averaged images on L*, a*, b* rectangular coordinates were obtained. Polar coordinates (C*, h°) were calculated. In all cases, the results were described. The results allowed to describe the color variations of the fruits during ripening, using colorimetric coordinates from CIE-L*a*b* and CIE-L*C*h° color spaces, by means of digital images obtained with computer vision system.
