Abstract : This paper presents the results of a study conducted using ultrasound to extract the total phenols from common mango skin. The ethanol concentration, extraction time and residue/solvent ratio had a significant influence on the amount of total phenols. The optimum extraction conditions involved 60% ethanol as solvent, time of 20 min and 1 g residue/15 ml solvent. Ultrasonically assisted extraction proved an efficient process for obtaining phenolic compounds in the skin of common mango.
