Abstract : Fruit dimensions, edible portion, proportion of stone and peel, specific gravity and composition (moisture, TSS, acidity, total sugars, reducing sugars, starch, ascorbic acid and phenolics) were studied over 14 weeks from fruit set to harvest maturity in 4 mango cvs (2 seedlings, Totapuri and Pairi) to determine the optimum stage of growth for harvest for preparation of mango powder. Results are shown and discussed.
