| Ingredient | Medium-ripe mango(peeled and cut into chunks), star fruits, pineapple(peeled), lemon-lime seltzer or soda pop, apricot nectar or juice, freshly squeezed lime juice, pineapple extract or crushed pineapple, fresh mint leaves for garnish. |

| Method of Preparation | In a blender or food processor puree mango, 2 star fruits( save 1 for garnish ) and pineapple until smooth. With the motor running, add seltzer, apricot nectar, lime juice and pineapple extract. Process until blended. Cover and chill until ready to serve. Serve in small soup bowls that are set in larger bowls containing crushed ice or serve in frosty glass mugs. Float a slice of star fruit in each serving and garnish with mint leaves. |
