Unripe mangoes, water, brown sugar, cumin seeds(roasted and ground), black pepper, garam masala powder, black salt(optional), fresh coriander leaves, fresh mint leaves, onion, fresh ginger, green chillies(minced), salt. |
| Method of Preparation |
wash the mangoes thoroughly and boil them in water till tender. Drain water. When cool enough to handle, extract the pulp and strain it through a strainer and add the sugar and spices to it. Put in a pan and heat till the sugar has dissolved and the syrup is thick. Remove from heat and allow to cool. Separately, in afood processor mince together the coriander leaves, mint, onion, ginger and green chillies to a fine paste. Stir into the mango mixture. Bottle and refrigerate. |
