Mango Mayonnaise

| Ingredient | Eggs, salt, black pepper, dry mustard powder, ripe mango pulp(canned or fresh), oil(olive or corn), lime/lemon juice or chilli vinegar. |

| Method of Preparation | Beat the eggs in a processor at medium speed. Add salt, pepper, mustard and mango, and blend well. Add the oil very gradually without stopping the blender and continue till the mayonnaise thickens. When it is really thick stir in the lime juice or vinegar. Continue to blend till all the oil has been used up. |
