| Method of Preparation | Dry the mango stones in the sun for a dat or two. Break open and take out the kernels. Slice the kernels and boil them in salted water till cooked. Drain and rinse in fresh water. Heat oil in a skillet or kadhai and fry the onions to a pale golden colour. Add turmeric and all the three pastes and fry till brown then add cumin, coriander, garam masala and red chilli powders and half tsp salt. Add the boiled kernels and continue cooking. From time to time add a little water, drying it off after each addition till you have used about a cup full. Adjust the salt to taste and serve hot. |
