Firm semi-ripe mangoes, oil, mustard seeds, curry leaves, blades lemon grass(chopped), onion(chopped), ginger paste, garlic paste, garam masala powder, turmeric powder, red chilli powder, salt to taste, sugar, brown vinegar, coconut milk. |
| Method of Preparation |
Peel and cut mangoes into large chunks. Discard the stones. Heat oil in a large skillet or pan. Add mustard seeds and when they begin to splutter add the curry leaves, then lemon grass and onions. Cook stirring for a few minutes then add the ginger and garlic pastes, garam masala, turmeric and red chilli powders and salt. Sauce on low heat adding a dash of water if it tends to burn. Cook for 5-7 minutes and then add the mango, sugar and vinegar. Cover and simmer till the mango is tender and the liquid has dried up. Gradually add coconut milk, mixing gently. Adjust salt to taste and serve. |
